Most of the Lamb sold through the shop is sourced from the same estate as the Pheasants. Izzy's husband is a keen shepherd and prides himself on animal husbandry, which in turn leads to producing top quality lambs.
The lambs are reared on the grazing of the estate, in the completely natural surroundings and countryside, which is favourable to sheep farming.
If none of the estate lambs are available, then it is sourced from one of the neighbouring farmers who also maintain their flock to high standards. We are very lucky in the fact that we have local abattoirs, ensuring that our animals don't have to endure long journeys. It also keeps food miles to a minimum.
